This is the real Sea moss (Gracilaria) seaweed (aka sea moss). This sea moss is the dried (but still pliable and moist). It is highly nutritious, containing many minerals and lubricating properties for the glands and joints.
Sea moss is found along the coastal regions of the Caribbean islands, Europe and around Ireland. This seaweed is usually soaked and made into a drink or used as a gel. It does not have much taste or color, which helps it to blend well with all types of dishes. The ancient Irish folklore medicine used this moss for treating people with respiratory conditions including tuberculosis and pneumonia.
To make a yummy Sea Moss Drink:
Rinse 1 cup of dry moss very well over several minutes to wash away any excess salt. Taste a small piece to ensure it is no longer too salty. Keep rinsing until it is mild tasting.
In a large saucepan (Choose a large pan, because the moss will expand to triple its' size!), place moss in 5 cups of fresh water. If you are preparing for a sea moss drink, add pumpkin pie spices like 1/2 teaspoon of nutmeg powder and 1 heaping teaspoon of cinnamon powder to flavor it. you can add cinnamon chips or sticks if you prefer.
Cook on low heat for 30 - 45 minutes hour. Do not let it boil over or it will make a bit of a mess!
When the moss has softened and multiplied its volume, it is ready to process into paste.
a) For a delicious and healthful drink, blend the soaked moss in a high-speed blender with 1 cup coconut milk (homemade or canned is best) and sweetener to taste. You may want to use a little bit of stevia, some molasses and/or honey.
b) For topical use, do not use the coconut milk or sweetener, but instead blend with 3/4 cup water in a high speed blender to thin it out.
Makes smoothies extra thick and creamy Who does not like a yummy creamy smoothie or nut milk? For the recipe: Add 1/2 to 1 TBSP of Irish Moss Paste per 1 cup of liquid to your nut milk or smoothie. If you prepare a chocolate-based smoothie you might need to adjust the sweetener.
Notes: 1 cup dry moss will yield 3 cups soaked moss. Store the Irish Moss paste in a clean glass container (Mason jar, etc) in the refrigerator for up to 2 weeks. Sea Moss paste may be frozen. It is convenient to use an ice cube tray and fill it with Irish Moss paste. When it is completely frozen, wrap it in a pouch bag. Then, allow to melt and use as needed.

Sea Moss Paste can be used to firm up raw desserts: Firming up a raw dessert can be achieved by adding sea moss paste to a nut-cream and storing it in the refrigerator or freezer. Sweeten to taste. Cool in fridge for 4 hours.

Sea moss is a red algae species. There have been serious health concerns with the food additive “carrageenan gum” which is derived from Irish moss, a related seaweed. This additive is found in ice creams, syrups, sauces, and many commercially packaged, highly processed foods. It is not the same as consuming pure Sea moss or Irish moss. Yes, carrageenan gum does come from Irish moss. But carageenan is heated and concentrated Irish Moss that is then highly processed into chemical form. The over-processing and loss of nutritional value of carregeenan is what makes it a health hazard.
